This year I have not written any New Year´s resolution. Amongst many other reasons, because I would probably have failed to keep any of the resolutions within one week. As I’ve done for the last… erm… many years.
As you can read here, I love lists. . So after being absolutely amazed by a project from the inspirational Moorea Seal called 52 Week Project, I decided to start the 12 Week Project,

I thought it was a brilliant idea, and because I love lists, I honestly believed it was going to be an easy one.
Let me tell you something: rummaging around the depths of your soul is not an easy thing to do. The first word that came up was "congratulations". It was indeed the most difficult one to write down. It even had a typo... my hand was dubious. Not sure why it was the first one. I tried really hard to free up my mind and let the pen write down whatever words appeared. But I found I was inhibiting myself, my creativity, my deepest thoughts. Maybe because I knew you were going to read it. Maybe because I knew I was going to read it myself. But the truth is that it took me at least 10 words to stop this self-censoring. Then I was completely unable to stop. Each word took a bit of weight off my soul, making me feel lighter, happier, relieved.
So here you have a bit of me. A fresher, lighter and richer me. I would really like to encourage you to print your own list and let your pen fly. But just a bit of advice: don´t try to find a sense from any of these words. Just enjoy the cathartic pleasure of letting them out.
This week’s recipe will surprise you for sure. A soft and tasty fried ball that will let your taste buds fly free in an uncensored explosion of flavours and textures.
WHAT YOU NEED
For around 12 Potato Bombs
4 Medium Size Potatoes or 250gr Mashed Potatoes Leftovers
1 Egg
50gr Cheddar Cheese Cubes
3 Small Sweet Peppers Slices
200gr Breadcrumbs
Salt and Pepper to taste
500ml Olive oil
WHAT YOU DO
Wash the potatoes and bake them or microwave them until soft. Allow to cool and mash them.
In a large bowl combine the mashed potatoes with the egg. Add salt and pepper to taste. Mix with your hands.
Grab a small scoop of the mashed potatoes and gently wrap a cheese cube and a piece of pepper with it.
Put the breadcrumbs in a deep bowl and cover the bomb.
Fry them in hot oil one or two at a time until they’re golden on all sides.
Let them drain on some paper towel.
Serve warm so they explode!
Try filling them with different ingredients such as ham, goats cheese, spinach, nuts, possibilities are endless. Also, they are even more amazing dipped in sour cream, mayonnaise or soya sauce!
