Butternut Squash, Cinnamon and Condensed Milk Pie

Friday 14 February 2014

We all want to be normal. To be accepted. To reach a certain number of milestones in our life that will make our relatives feel proud of us. Since we were born, there are lots of people around us setting up plans for our entire life. Telling us what to do, and what not to do. And convincing us that the dreams we are following are genuinely ours.

This aim to make us seem all the same starts frustrating us when we are kids; making us feel angry and misunderstood later; and ends up with us becoming grey, sad, unsatisfied, normal adults in a permanent seek of happiness. This happens because the human being has an innate need to shine that is continuously dampened.

However, I firmly believe that our inner child is still there, ready and steady to give us a second chance. We only need to let it bright again. Some people don't really need to do too much to sparkle.  But in some cases, our inner child has been so trampled on and so well trained to keep hidden, that we will need more motivation than others.

But even the most shielded person will be able to sparkle a little if they are brave enough. And let me tell you that when a heart starts shining again, it is almost impossible to stop.

This week's recipe is a tribute to freedom: do whatever makes you feel happy.

Nobody thought a butternut squash pie was going to work, but I didn't care. And it turned out to be incredibly delicious.

If I had listened to them, the world would have lost one of the best recipes ever.

WHAT DO YOU NEED

1 Kg Butternut Squash Cooked and Drained
100 ml Condensed Milk
150 gr Self Raising Flour
100 gr Sugar
150 ml Sunflower Oil
3 Medium Eggs
1 Tsp Ground Cinnamon

WHAT DO YOU DO

Preheat the oven to 175ยบ.

Put all the ingredients in a big bowl and whisk.

Cover with oven paper a cake mould and pour the mixture in.

Bake for 45 min.

Transfer into a cooling rack.

This time, I've decorated it with nuts and carrot strips, but whipped cream, clotted cream, jam or ice cream are great combinations as well.
