Creamy White Lasagna

Everyone has one (or more) song(s) that they never get tired of listening to.

I'm talking songs or melodies that you have heard probably a hundred times, and still makes you smile. Songs that give you chills, songs that make you sad, songs you play while running or working, or just songs you like to sing. Could be Jazz, could be rap, could be orchestral, cultural, Rock and or Roll! Just any song you've never seem to grow tired of hearing.


I mean the kind of songs you don’t even need to listen to start singing. The kind of song that start automatically when you hear a particular word.

Like the word “everybody” makes you say “rock your body”. Or when someone says “ooops” and you continue “I did it again”.

But also the songs that make you feel special. Like when they decide to play “Don’t stop me now” randomly on the radio. And you sing at the top of your lungs. And you feel powerful.

Or even songs that make you cry, like “Stairway to heaven” or “Hallelujah”, and tears run through your cheeks and then you feel renewed and blessed and happier.


But if I had to choose one song, one only song, just one to be listening forever it would be, without a doubt, “Scent of a Woman - By a head”. A tango song that makes me feel sad and happy and miserable and excited and wonderful all in just 2.25 minutes.

A melody that is simply and utterly perfect.


This week recipe is an amazing white lasagna that I could be eating day after day without getting tired of. A nice, original and tasty recipe that everyone would love no matter how often you cook it.


WHAT YOU NEED

For the Lasagna

300gr Wholemeal Lasagna Sheets
200gr Fresh Spinach
160gr Diced Smoked Bacon
60gr Sultanas

100gr Parmesan
500gr Pork Mince
3 Garlic Cloves
3tbsp Tomato Paste
1tbsp Extra Virgin Olive Oil
1 pinch Oregano
Salt and Pepper to taste

For the White Sauce

25g Butter
25g Plain Flour
250ml Milk
2 bay leaves
50gr Grated Parmesan
A pinch of salt
A pinch of nutmeg
Salt and pepper to taste



WHAT YOU DO

We´ll start preparing the white sauce.

Put the butter and plain flour in a saucepan and cook on a low heat until the butter has melted. Stir together until fully incorporated.

Once the butter has melted and the butter and flour are mixed together, gradually add the milk. Stir to ensure that each addition of milk is fully incorporated before adding more.

Once all of the milk has been add the grated Parmesan and the nutmeg. Mix and season with salt and pepper to taste.

Whisk continuously until the sauce has thickened to your desired consistency. Remove from heat and set aside.

We´ll now make the filling.

Preheat oven to 200C.

In a big pan, put the olive oil to high heat. Chop the garlic cloves and cook with the diced bacon until golden brown and crispy. Then add the mince meat and cook to low heat. Season with oregano, salt and pepper and stir until thoroughly cooked.

Add the sultanas and spinach and cook for an additional couple of minutes.


Now we´ll put everything togeter.

Spread the tomato paste in a deep oven proof dish. Cover with lasagna sheets and add some white sauce. Then cover with the meat and spinach mixture and shave some Parmesan on top. Cover with some additional sauce. Then add some more lasagna sheets and repeat layers until using all the meat and spinach. Finally top with white sauce and Parmesan cheese.


Bake 25 minutes.

Serve hot and enjoy.
