Summer Squash Savoury Muffins

Yes, I know. Muffins are supposed to be sweet.

But not everything in this life can be sweet. Sorry for disappointing you.

I can perfectly understand your skepticism.

But we can give to savoury food a lovely and tempting muffing shape.


Yes, this is going to be another self confession moment. Muffins are the second best thing in the world. After jam.

And those muffins are so good that they definitely needed to be the first recipe of my blog.


They can be eaten slightly warm as a tasty snack and go beautifully with soups or as a side together with fish or meat. They can be eaten in breakfast, lunch or dinner. Try to put them in your kids´ packet lunch. They will love them. Because don´t forget they´re muffins!!! (don´t ever tell them they have "green" inside... why do children seem to have an anti green food detector?)

No wheat or flour is used in this recipe. Neither cheese, cream or dairy product. They´re completely guilt free eating!

And it just will take you around 20 minutes to prepare.

WHAT DO YOU NEED?

To make 12 regular size muffins you´ll need...

1 Delicata Squash (you can also use courgettes, for example).
1 Onion
3 small apples
200 gr of diced smoked bacon
100 gr diced dates
5 Eggs
A sprinkling of salt and oregan
2 Tbs. extra virgin olive oil

WHAT DO YOU DO?

Preheat your oven to 200ÂșC.

Chop the onion, the apples and the squash. Then, warm up the extra virgin olive oil in a nonstick frying pan. Add the onion and stir frequently until brown. Then add the squash, the apples and the dates and stir until the vegetables are soft and tender. Tip: if you cover the pan with a glass lid, the vegetables will be ready sooner. Then add the bacon. Tip: if you love crunchy bacon, you can fry it separately and then add to the mixture.




Put the eggs in a large bowl and stir. Then add the vegetables and stir until have a blended mixture.



Grease just a bit the muffin pan and spoon the mixture gently onto each case. As there is no yeast, you can fill each case up generously.




Bake for 15 - 20 minutes, or until the muffins are golden and a toothpick inserted into the center of  one muffin comes out clean.


Remove, serve and enjoy!
