Yellow Beetroot & Goats Cheese Quiche

I'm really tempted to buy one of those "no junk mail" signs. Honestly, you won't believe the amount of junk mail that gets pushed through my front door on a weekly basis. You know, local free weekly paper stuffed with the usual rubbish.  This week's inventory includes a couple of Indian restaurants booklets, one massive pizza restaurant voucher, a local shopping centre Christmas voucher, 3 Chinese restaurants leaflets, 4 envelopes for the home-owner, a state agents card, the local neighbour newspaper, 2 booklets with local services advertising, a couple of invites to join different religions, and a leaflet about a credit card I definitely can't afford. And exactly 23 copies of the same letter from Virgin Media. Twenty three. And that´s only this week.



This is just over the last week and to be honest I'm getting a little annoyed with this unsolicited rubbish constantly being dumped in my house. I have been considering different strategies. For example, I could get a new front door fitted that has no letterbox, or I could use the junk mail to lit my fireplace. However, the first one seems a bit too drastic (and expensive) and the second one is not quite practical since I don´t have an open fire.


I have also been advised that having one of those "no junk mail" signs won't necessarily stop postmen pushing unaddressed envelopes and leaflets through the letter box. They may know you don't want it, but Royal Mail earns millions from delivering advertising material to homes all over the country.

So after considering it for a while I´ve found the perfect solution: I have started using the pre-franked envelopes to send companies other companies' junk mail.


This week I've sent a couple of Chinese restaurants' leaflets to a credit card provider, some pizza vouchers to a local car dealer and some state agents' cards to a local mobile hair dresser. I may be even doing them a favour, who knows!

I'm still thinking about what to do with Virgin Media. I feel really tempted to send them something a bit more elaborate like 23 envelopes full of glitter or lice. Do you think that will help them to get the message?


This week´s recipe is something I did after been given some amazing yellow beetroots someone was going to throw away thinking they were not good. Did you know beetroot can be yellow? I didn't. But it is by far the most amazingly delicious root vegetable I´ve ever eaten.

If you can´t find yellow ones, I´m sure it will be amazing with normal red beetroot as well.

WHAT YOU NEED

1 Shortcrust Pastry Roll
3 Yellow Beetroots
2 Leeks
6 Eggs
150ml Soured Cream
100gr Goats Cheese
Fresh Parsley
Salt and Pepper to taste



WHAT YOU DO

Preheat the oven to 170C.

In a deep bowl, beat the eggs with a hand whisk. Add the sour cream and season with salt and pepper.

Wash the leeks under running water and chop in thin slices. Add to the egg and mix.


Unroll the pastry and put it in an oven proof round tin. Carefully trim off the excess pastry using a small sharp knife. Line pastry with baking paper and add baking beans to weigh it down. Bake for 15 mins. Then carefully remove the paper and beans and cook the pastry for 5 mins more.


Add the egg and leeks mixture.

Cut the beetroots in thin slices and put them on top. Add the goats cheese and sprinkle with some fresh parsley.


Bake for 40 minutes.

Serve warm and enjoy.

  1. LOL. Very funny solution for your "junk mail problem". Just a minor consideration: What will happen when you need one of those Chinese restaurant leaflet, the day you decide not to cook?
