Pumpkin carving can be a lot of fun, but much of the pumpkin can go to waste if you're not creative. The flesh is often used to make a puree for a pie or some other treat, but you may wonder what to do with the stringy pumpkin guts. Following last week´s post, I have been quite reluctant to get too involved in any the shocking Halloween activities going on around us. However, I wanted to find some a bit more appealing activities as the boys were really keen on doing something together. 


Today we´ve dressed up and have took part in 1k Halloween Fun Run. I was a bit skeptical about it, but I must admit it has been absolutely great! Lots of runners most of them dressed up with home made costumes. Lanterns, spiders, witches and a run through the park in a lovely autumn evening. The boys have done amazingly well, running nonstop all way long. They´ve been given a medal and a banana with a phantom face. And we´ve come back home happily tired and feeling proud of ourselves. 


On our way back, we´ve seen loads of lit pumpkins in our neighbours homes. We bought ours a couple of days ago and I can´t wait until tomorrow, when we´re planning to carve it.

Visiting a farm, picking a pumpkin, and carving a jack o'lantern is one of my favourite autumn traditions. From choosing the right one to design the spookiest face ever, creating a halloween pumpkin is something me and the boys really enjoy doing every year. 


This week recipe is a proper Halloween treat, healthy, nutritious, and easy to make. And a creative way of making the most of your carved pumpkins!

WHAT YOU NEED

1 Medium Pumpkin
1 Shortcrust Pastry Roll
100gr Pecan Nuts
50gr Houmous
150gr Sultanas
1 Pinch Cinamon
50gr Icing Sugar


WHAT YOU DO

Here's something to do with your leftover carving pumpkins. Did you know you can shred and freeze pumpkin? You can then bake or cook with it. If you freeze it shredded it will defrost within minutes!

Shredding a pumpkin is easy. Cut sections off of your pumpkin. Slice into small squares. Slice off the skin side. Put into a food processor and process until it is all shredded. Use or freeze in a freezer bag. 

Preheat the oven to 190C.

Unroll the shortcrust pastry and cut in 2. Put some shredded pumpkin in one half and add some sultanas and houmus. Sprinkle some cinnamon to taste. Cover with the other half folding the edges up.


Carefully, cut in squares and put a pecan nut on each one.

Bake in the middle of the oven for 15 minutes or until the pastry is golden. Be careful so the pecan nuts don´t get burned.


Cold up in a wire tray and serve cold.

  1. Last night I dreamed with this recipe... with the roasted in the oven pecan nuts, feeling their taste in my mouth... even in the dream (very realistic dream, to be honest)...Definitely, one of my favorites recipes of your blog.
