Roasted Pumpkins

Friday, 28 October 2016

The warm and sweet nature of pumpkin makes it one of the most delightful comfort foods to be enjoyed roasted, steamed and smeared with butter, or blended into soups in the cooler months.

Did you know that pumpkins are not vegetables but fruits? They come in a multitude of shapes, sizes and colours. There are yellow, red, green, white, blue and even multi-coloured striped pumpkins. They can be huge, tiny, flat, short, tall, round, pear-shaped, long-necked, smooth, ribbed and even warty. Pumpkins are amazing for culinary uses. Inside the hard orange or yellow skin, the bright orange flesh is soft, sweet, smooth and honeyed. They are a good source of fiber, as well as providing a range of vitamins and minerals.

Courgette & Potato Omelette

Autumn is my favorite time of the year. The crisp air and beautiful colors pull me out of doors at every opportunity.

I love how all the leaves from the trees and plants change into multi-colored works of art and fall away. It creates bare, and vulnerable branches, revealing the true scenery underneath.
It also represents a beautiful cycle of loss, regeneration and regrowth once the spring season comes around.

I like harvesting apples and pears. And berries everywhere.

Pear & Cobnuts Crumble

Autumn is finally here. Colourful leaves, rainy days and board games evening. I love autumn. It makes me feel a bit melancholic. As soon as I see the leaves starting to to turn and feel the air getting crisper, it fills me with a warm fuzzy feeling and all my childhood memories come flooding back.

Last summer we decided to finally move all our belongings were kept in dusty boxes in my in-laws' home in Spain for years. Yesterday, the van arrived and around 30 boxes were stacked up in my living room.

I started opening them with excitement. I discovered an old music box my dad gave me when I was around 8; all my childhood books that I will now read to my children; some tin toys that I absolutely love; letters, cards and notes from people I can't remember. Everything, my entire life was in these boxes.

I hate you virus.

Deeply genuinely hate.

This is the fifth consecutive day of living with a virus. Five long nights with no sleep. Five long days dealing with paracetamol, ibuprofen, sore throat relief. Onions in a plate. Herbs steaming. Put the pillow up. Dress the children down. Visits to the doctor. They're still here and this virus doesn't seem to be getting the message.

A whole new world

The first step is recognize it… yes, I have a problem. That´s it. I´m insane about tiny jars.  My husband will probably say I´m insane. Full stop. But this is just because my husband loves me. And he loves me as much as I love tiny jars. Oh, dear. Here it comes again… my “problem” I mean…

Let´s try starting again with this.

Autumn is my favorite season of the year. Leaves fall, color changes, and it´s the perfect season to start any crazy project. Even as crazy as this one actually is.
