Courgette & Potato Omelette

Friday, 23 September 2016

Autumn is my favorite time of the year. The crisp air and beautiful colors pull me out of doors at every opportunity.

I love how all the leaves from the trees and plants change into multi-colored works of art and fall away. It creates bare, and vulnerable branches, revealing the true scenery underneath.
It also represents a beautiful cycle of loss, regeneration and regrowth once the spring season comes around.

I like harvesting apples and pears. And berries everywhere.

Superhealthy Courgette Pizza Crust

Last week I run my first muddy run with my dearest friend Paula in support to Cancer Research UK. It was one of the funniest things I’ve ever done, and one of the trickiest at the same time. While the experience was awesome enough to have me coming back for more, I found it emotionally a bit upsetting.

When I was 20, I hardly knew anyone with cancer. My grandma had died of it, but that was years ago when I was much younger and I didn’t know much about it. Fast forward 10 years and it’s an entirely different matter.

Courgette & Date Bread

We are on holidays!!! Yay!!! I'm sleeping so much that my muscles ache. I'm eating more than I should. I'm having fun. I'm not getting worried about anything. I'm visiting family and friends. I'm remembering how bloody hot Spain is.

Honestly, really hot. Almost unbearable.

Quite often my British friends ask me what took me to swap the sun for the rain. Well, if you were here with me at the mo, you wouldn't need me to answer that question.

Zucchini Noodles

My two sons are normally very good eaters. Apart from a couple of things, which I really don´t like much myself, they eat almost everything. I was like that when I was a child. I have always enjoyed a good lunch, my most favourite being fried eggs with French fries and homemade garlic mayonnaise. Yum.

However, when my husband was a child he was really picky, which provides the whole family with endless amusement. My mum-in-law enjoys telling us time and time again stories about how she had to blend everything to make him eat something. Apparently, he liked to read house decor magazines, which she used to take advantage of to fatten him up. But her joy didn't last long, as he was a keen page turner and, no matter he was only 2, if she dared to give him the same magazine twice, he would refuse to eat for the day. But like the intelligent mum she is, she had other tricks like adding some cheese puffs on top of the mush or even M&Ms!

Crunchy Courgette Bites

If you really really really want to piss me off, arrange an appointment for me with the dentist.

No offense, but I'm pretty sure dentist have a deep and hidden need of tormenting the others. I would even dare to say that there is something evil in them. That in reality, they enjoy being dentists.

Because, OK, having a toothache is not nice at all. But why do they insist on making things even worse?

It-Which-Must-Not-Be-Named Pasty

When I firstly made the Apple and Courgette jam, and I gave it to try to my "quality control board" formed by my 2 years old, my 4 years old and my 34 years old. The unanimous question was:

Is it more applely or more courgetty?

What?

If it´s more courgetty... or more applely....
